A London Dry gin is a gin made by distilling all the plant material (botanicals) together at the same time, the only thing we add after distillation is pure filtered water. This gin is made in one of our ‘development’ stills, for larger quantities (20 bottles+) made on our production still please contact us for a quote.

The first decision for your bespoke gin is to pick a fixative – Orris and/or Angelica root. These ingredients add flavour but also help to ‘fix’ all the other flavours in your gin. You can pick one or both if your prefer.

Your next decision is citrus, most gins have a citrus component and some might say this is essential for a good gin. The choice is yours but you probably want to pick one or two citrus ingredients for your bespoke gin.

Spicy botanicals can provide additional length to your gin as the spice tends to hit your palette later.

Think about the style of gin you like. If you like floral gins for example, pick more from the floral category or use the notes section to ask us to double up on these flavours.

“Less is more”. The more flavours you add the greater the risk that something will clash or cancel out other flavours. You can always re-order, so we suggest you start simple and add more ingredients next time.
